so the PDCI-11V, PDCI-20V and DC-CDI P2 RACE don't need either the battery if running from generator(with battery iliminator fitted) or generator if running from battery(total loss) and also don't need the high voltage coils on stator, if this is the case, can the stator be removed altogether and just run the rotor and pickup, also remove rotor and fit pick up wheel with 1 or 2 lobes for either 1 or 2 pickup system, this would be alot lighter but would motor be ok without rotor.

Yep either the generator (with battery eliminator) or a battery in total loss would be needed.
If running total loss yep all of the generator coils could be removed. It would be wise to keep some flywheel type inertial mass though as it will help with traction and give smoother drive. A flywheel is supposed to help with overrev too.
A pick up wheel would certainly work without problems though
